Phirni

Ingredients :for 4 cups

1.One cup rice grounded  (roughly grounded)
2.Half ltr milk
3.One cup sugar/Jaggery as per ur taste
4.Kesar soaked in milk-Two table spoon
5.Dry fruits-Badam, Raisen,Cashew nuts one table spoon each chopped.
6.Elaichi powder -half table spoon.
7.Ghee - 2 Table spoons


Preparation:

1.Soak the grounded rice in water for 1 hr.

2.Heat ghee in a pan and fry all the dry fruits.

3.Add the soaked rice and then add milk.

4.Now add sugar and keep stirring for 8-10 min until the rice boils completely in milk.

5. Now add Kesar milk and Elaichi powder.

6.Let it cool and serve chill(When cooled it thickens ).



Mango Lassi

For 2 Glasses :

Ingredients :
1.One riped Mango peeled and sliced
2.One cup curd
3.Half cup milk
4.3-4 Table spoon sugar as per the sweetness required.
5.Elaichi /cardamom power-one table spoon.
6.Kesar soaked in milk-2 table spoon.
7.Pinch of salt

Add all the above ingredients in a blender and blend for a minute.Serve chill for best taste.

Padval kai/snake guard coot

For 2 people :

Ingredients :
1.One cup toor dal.(togari bele)
2.Half cup grated coconut.
3.1 table spoon chana dal.(kadale beele)
4.2 Table spoon udad dal(Uddina bele)
5.3-4 Red chilli
6.One table spoon pepper
7.One table spoon jeera
8.Curry leaves, mustard seeds and oil for tadka/seasoning
9.Salt for taste.
10. 3 cups chopped Padval kai(medium size)
11.3 table spoons of groundnuts
12.3 table spoons coriander seeds
13.Jaggery for taste(about 2 table spoon)
14.Tamarind paste 2 spoons.
15.Asafoetida (ing)

Procedure:

1.Boil chopped padval kai in a separate vessel and soak the water and keep aside.Boil toor dal along with groundnuts or pressure cook it .

2.Dry roast udad dal,chana dal,red chillies, pepper ,jeera ,coriander seeds and grind .Make paste with coconut.

3.In a pan,heat oil and make tadka by adding mustard seeds ,little jeera , asafoetida and curry leaves.

4.To this add, boiled toor dal and add the grinded paste.Now add the vegetable ,jaggery and tamarind paste.

5.Add salt and water accordingly.

Menasina Saaru / Pepper Rasam

For 2 people :

Ingredients :
1.One cup toor dal.(togari bele)
2.Half cup grated coconut.
3.3-4 Red/Green chilli
4.One table spoon pepper
5.One table spoon jeera
6.Curry leaves, mustard seeds and oil for tadka/seasoning
7.Salt for taste.

Procedure:

Boil door dal or pressure cook it .Dry roast  pepper ,jeera and grind with grated coconut .In a pan,heat oil and make tadka by adding mustard seeds ,red chilies , little jeera and curry leaves.To this add, boiled toor dal and add the grinded paste.Add salt and water accordingly.You can also add grounded pepper in case you need more spice at the end and a table spoon of lime juice.If red chilies is not added for tadka, u can add 2-3 green chilies and the end while boiling

Ladies Finger Pachadi

Ingredients : For 2-3 people :
1. About 6-8 Ladies finger medium /finely chopped
2. 2 cups thick curd.
3. Salt for taste.
4.Finely chopped coriander leaves.
5. Curry leaves,oil,mustard seeds,2-3 Dried red chillies,Udad dal,Chana dal for seasoning/tadka.

Preparation: Heat 2 tablespoons of oil in a pan. Add mustard seeds,red chillies,udad dal,chana dal ,curry leaves to make tadka.To this add chopped ladies finger and fry for 5-6 minutes.Add the entire content to curd and mix .Now add salt and coriander leaves.Mix well and serve.

Coriander Chutney

Ingredients:For 1 cup chutney

1.Coriander leaves about 3 bowls or 200 gms
2.Green chilli 1-2
3.Tamarind Paste - 3 spoons(soak little tamarind in water and squeeze to make a paste)
4.Jaggery according to the sweetness you prefer.
5.Salt

Preparation:

Add Coriander leaves, Green chilli and salt to form a thick paste.Heat the paste in a pan with one table spoon oil.Add tamarind paste and jaggery .Stir for 2-3 min.

Ada Dosa

Ingredients:For 7-10 dosas
1.2 Cups of rice.
2.1 cup of udad dal
3.1/2 cup chana dal
4.1/2 cup toor dal.
5.3 table spoon methi seeds
6.Salt            
 
Preparation:
Soak rice and all the dals in water for about 7-8 hrs.Grind it to form a thick paste.Keep it for 6 hrs.Add salt and stir.Now the dough is ready for preparing dosa. Other types of dal can be added which is optional.
